Our Story


It's All About Fire, Meat & Love...

When it comes to great barbecue, there are no short cuts. It begins with the right woods - a clean fire - and the finest of meats.

It also isn't for the faint of heart. The hours are long - the work is hard & dirty - and attention to detail is a must.

So when Drs Michael & Venssa Knight decided to establish Black Cow BBQ in Park City, UT, they knew what they were getting into - and they came to the table well prepared. Native Texans who grew up on "old school" beef barbecue... Over 8 years of successful professional competition BBQ experience & numerous awards... The first BBQ team from Utah to ever be invited to compete at the Jack Daniels World BBQ Championship in Lynchburg, TN... Countless hours spent in classes & training with some of the very best pitmasters across the country... And somewhere along this amazing journey, discovering in their souls a real love & passion for the art of barbecue.

And their commitment & hard work have obviously paid off based on the smiles & rave reviews by numerous patients and customers they have privately cooked for in the Park City and SLC area over the past 9-10 years. 

At Black Cow BBQ, we do "old school" pit barbecue... And BBQ Beef - brisket, beef ribs, etc - is our specialty. We only cook over a wood fire - no gas, no charcoal, no pellets... And yes, with time... Lots and lots of time... Because exceptional is what we are always aiming for...
